Taco Salad

turkey & bean taco salad on bed of lettuce....easy to omit meat for full veggie meal
Ingredients
- 4 oz Ground Turkey 99% Fat Free
- 2 cups Organic Dark Kidney Beans
- 1/3 cup Light Sour Cream
- 1/2 cup Salsa
- 2 medium raw Roma Tomato
- 2 tsp Chili Powder
- 2 tsp Cumin Seed
- 1/4 cup Cilantro, Fresh
- 1/2 cup Vegetable, Onion
- 1 tsp Minced Garlic
- 340 g Romaine Lettuce
Directions
> chop tomatoes, onion & lettuce
> saute onion & garlic until tender
> add turkey & brown
> add beans, tomatoes & spices - turn down heat to med-low
> in bowl mix the sour cream & salsa
> add just over half of that mixture into the cooking mix
> add lettuce to remaining sour cream & salsa mixture & mix until covered
> let the taco mixture heat, stirring occasionally, until tomatoes are tender & bean are heated through
> Eat warm over lettuce
