Taco Salad (with Ground Pork)

Super NOM Taco salad with a few little tricks to keep it healthy! I tend to way over-estimate on the calories - this is probably about 6 servings' worth of meat and i don't think i really used the whole 1/4 cup of dressing.... also you can cut out 150 cals by skipping the tortilla and beans (but omg the best part!)

Ingredients

Directions

TORTILLA BOWL:
- 1 Flour Tortilla
- Pam Cooking Spray
Spray both sides of the tortillas with non-stick cooking spray, and place on back of oven-safe bowl (or bowl-shaped object). Top with another bowl (to hold form) and bake at 350°F for approx 10 min, until you can remove the top bowl and it will hold its form - then bake another 5 to 10 minutes or until crispy.

MEAT MIXTURE:
- Olive Oil
- 1 Small Onion (chopped)
- 2 Small Jalapenos (chopped)
- 19.2oz package of Ground Pork 95% fat free
- Seasonings as desired (Chili Powder, Cumin, Oregeno, Cayenne, Chipotle Powder, Garlic, Etc.)
Heat the olive oil in a skillet and add onions & peppers, sautee until soft, add meat and seasonings, and cook until done.

DRESSING:
- 1.25 cups Fage 0%
- 1/4 cup tapatio (to taste)
Mix together

ASSEMBLE - above prepared items & rest of ingredients:
Place finished Tortilla bowl onto plate,
spread 1/4 cup of refried beans onto the bottom of the bowl
top with a generous handful of salad mix
top with chopped cilantro
top with 1/5 of meat mixture
top with 1/4 cup of dressing
top with a scoop of fresh salsa
