Deconstructed tortilla soup. Add your own extras. Plus it's VEGAN.

Ingredients

Directions

* Chop the onions and the garlic.
* Heat oil in large stock pot over medium-high heat.
* Add onions and garlic to pot.
* Saute for about five minutes or until the onions just start to turn translucent.
* Add spices and cook for about 2 minutes
* Add tomatoes and cook for 5 minutes
* Remove from heat and add half of broth. Stir.
* Place pot mixture and rest of broth in blender.
* Blend until smooth.
* Return mixture to pot and heat to a simmer.

The key to this soup is to let people add their own condiments. This is what I like:

* Roasted Grape Tomatoes (see recipe)
* Tortillas for Deconstructed Tortilla Soup (see recipe)
* Soy-sation cheese
* Sun-dried tomatoes
* Avocado slices

This soup keeps well in the refrigerator for a week.
