Much of the flavor in these tropical, coconut-covered snacks comes from orange and lime zest, so don’t forget to include both in the recipe. The balls consist of cashews, almonds and dried dates. And don’t discount the health benefits of dates; their exceptional sweetness comes with a significant amount of fiber, potassium, magnesium and antioxidants.



1. Add the cashews and almonds to a food processor. Cover and pulse until finely chopped, but not paste-like. Add the dates, mango (or pineapple) juice, protein powder, orange and lime zest, and salt and blend until the mixture starts to form a paste.
2. Transfer the mixture to a bowl. With clean hands, form into 16 balls, about 2 tablespoons each. (Hint: Keep your hands lightly moistened with water so mixture doesn’t stick to your hands.)
3. Roll each ball into the shredded coconut to coat.
4. Place in a sealed container. Store in the refrigerator for 1 week or freezer for 1 month.
