Tuna Pasta Salad With Avocado

This tuna pasta salad uses good-for-you avocado instead of mayonnaise. Bring it to your next gathering for a side dish that everyone will love.

INGREDIENTS

SERVES 3

  • 1/4 cup Whole Grain Rotini Pasta
  • 12 oz canned white tuna (packed in water)
  • 1/2 fruit without Avocados, raw, California
  • 2 tbsp Basil, fresh
  • 1 tbsp Pine Nuts
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper

DIRECTIONS

1 Cook the pasta as directed and chill in the fridge for 1 hour.
2 In a bowl, combine the tuna with the avocado, mixing well.
3 Mix in the basil and pine nuts
4 Remove pasta from fridge and gently mix it into the tuna mixture.
5 Add salt and black pepper, adjusting to taste.
6 Notes:
7 While this recipe uses whole grain rotini, feel free to use your pasta of choice.
