Turkey, Apple and Cheddar Quesadilla ( From Leftover: Roasted Turkey)

INGREDIENTS

SERVES 2

  • 1 apple
  • 4 whole-wheat tortillas (8-inch)
  • 1 sec Cooking Spray, Extra Virgin Olive Oil
  • 1/2 cup Sharp Cheddar Shredded
  • 2 1/2 oz Roast Turkey Breast
  • 2 stalk scallion(s)
  • 3/4 tsp fresh rosemary
  • 1/4 tsp ground black pepper
  • 2 tbsp Honey Mustard

DIRECTIONS

1 Core the apple (such as Jonathan apple), then extra-thinly slice.
2 Lightly coat one side of each tortilla with the cooking spray. Turn two of the tortillas over and sprinkle these with half of the cheese; top with all of the turkey (use chilled leftovers from a special occasion or holiday meal!), scallions, rosemary (if using), black pepper, and apple slices; and sprinkle with the remaining cheese. Top with the remaining two tortillas, sprayed sides up. Press each quesadilla with a spatula to compact ingredients.
3 Cook the quesadillas in a medium (PFOA-free) nonstick skillet over medium-high heat, one at a time, until browned, about 1 1/2 minutes per side.
4 Cut each quesadilla into 4 wedges. Drizzle with the honey mustard or serve it on the side.
