Turkey Delish

This delectable dish is hearty and light at the same time. Mushrooms are a terrific addition for winter meals because they provide vitamin D and can strengthen your immunity. Many grocery stores offer a wide selection of fresh mushrooms to choose from, so feel free to deviate from the standard button mushroom.

INGREDIENTS

SERVES 4

  • 2 cups Fresh Mushrooms
  • 1/4 cup Oat Flour
  • 1/4 cup unsalted butter
  • 1 medium red onion
  • 1/2 tsp dried oregano
  • 4 cups Turkey Broth
  • 4 tsp Tamari Gluten Free Soy Sauce
  • 6 oz Kale

DIRECTIONS

1 Place the buttery spread in the bottom of a pot over medium heat.
2 Melt the butter and add the onions. Saute for a couple of minutes.
3 Add the mushrooms and sauté for a minute more.
4 Add the oregano.
5 Add the flour and stir to mix in well.
6 Add broth a half cup at a time, stirring well. As the gravy thickens, add more water until you get your 7. desired consistency and have used all or most of the broth.
7 Add the tamari to taste.
8 Add a ¼ cup of water to a large fry pan over medium heat.
9 As the water begins to boil, add the kale and water fry until wilted.
10 Divide the kale onto four plates.
11 Top each kale with a portion of the turkey.
12 Pour the mushroom gravy over each serving.
