This hearty soup is so festive it’ll keep the holiday mood going strong. You’ll use aromatic coriander and spicy ginger along with sweet pumpkin, carrots and onion. Top it with nutmeg for a hint of nutty flavor. And to make it a complete meal, serve it with your favorite bread.

Directions

1. Place the oil in the bottom of a soup pot over medium heat.
2. Add the onion, carrot, and celery and cook for a couple of minutes.
3. Add the pumpkin and broth.
4. Season with the tamari and bring to a boil.
5. Add the turkey.
6. Sprinkle in coriander and ginger and parsley.
7. Cook for several minutes.
8. Adjust the seasonings to your taste, topping with nutmeg as a garnish.
