Turkey Red Curry

Turkey Red Curry

Red curry paste can be found in most grocery stores. It features immunity boosters, including cayenne, that’ll help fight off colds. Be sure to toss in your leftover turkey toward the end of the cooking process; this will ensure that the meat doesn’t become tough. Enjoy the curry alongside bread or over rice or noodles.

INGREDIENTS

SERVES 2

  • 2 tsp Organic Extra Virgin Coconut Oil
  • 3 medium scallions
  • 3 medium raw carrots
  • 1 Broccoli, stalks, raw
  • 14 oz Coconut Milk, Canned
  • 2 tsp Red Curry Paste
  • 1 tsp Tamari Soy Sauce
  • 1/2 lb roasted turkey breast

DIRECTIONS

1 Place the oil into a fry pan over medium heat.
2 Add the onions, carrots, and broccoli, and sauté for a couple of minutes.
3 Add the curry paste, and mix in a little, then add the coconut milk and mix well.
4 Bring to a boil.
5 Sprinkle in the tamari.
6 Cook for 5-6 minutes and then add the turkey and cook a couple minutes more.
