This vegan avocado ice cream is a perfect dose of healthy hedonism. Avocados are rich in monounsaturated fats, which promote heart health, and contain a ton of beneficial vitamins. When eaten in moderation, this treat will satisfy your sweet tooth without making you feel totally bloated. The best part of this recipe is that you don't even need an ice cream machine to make it.



1. Add all ingredients into blender and blend until smooth.
2. First option: Pour into ice cream maker and spin.
3. Second option: If you don't have an ice cream maker, crush ice into two large freezer bags. Add ice cream mixture in third large freezer bag. Lay one ice bag flat, place dishtowel on top, lay the ice cream bag on top, lay another dishtowel down, and lay last ice bag on top. Freeze for 2-3 hours until soft serve consistency.

To make an individual serving, use 1 small avocado, ½ can of coconut milk, ¼ cup maple syrup, ½ tbsp. coconut sugar, ½ vanilla bean and ¼ tsp. salt. This amount will not be large enough for an ice cream maker, so use the freezer bag technique and freeze a minimum of 2 hours for soft serve.
