Vegan Cajun Red Beans and Quinoa

INGREDIENTS

SERVES 4

  • 3/4 cup dry quinoa
  • 1 tbsp extra-virgin olive oil
  • 1 medium red onion
  • 1 large Green Bell Pepper
  • 2 tsp Apple Cider Vinegar
  • 3 cloves Garlic Clove
  • 15 oz Light Red Kidney Beans (can)
  • 1/2 cup low-sodium vegetable broth
  • 1 Tomatoes
  • 1 1/4 tsp Cajun Seasoning
  • 1/4 cup Parsley
  • 3 cups Green Seedless Grapes

DIRECTIONS

1 Prepare the quinoa (or whole grain of choice) according to package directions.
2 Meanwhile, heat the oil in a large saucepan over medium. Add the onion, bell pepper, and vin¬egar and cook while stirring occasionally until the onion is softened, about 8 minutes. Add the garlic and cook while stirring until fragrant, about 1 minute. Add the beans, broth, tomato, and Cajun seasoning and cook while stirring on occasion until the bean mixture is stew-like, about 10 minutes. Adjust seasoning. (Note: If using salt-free Cajun seasoning, add 1/2 teaspoon sea salt to the recipe.)
3 Serve the quinoa in individual bowls, top with the bean mixture, and sprinkle with the parsley.
4 Enjoy with grapes (or other seasonal fruit) on the side.
