Vegan Caprese Salad With Avocado and Balsamic Reduction

Avocado will replace the cheese in this recipe for a luxurious vegan alternative to a classic dish. It's packed with heart-healthy fats, and it also contains a surprisingly significant source of fiber and potassium. Both boost heart health.

INGREDIENTS

SERVES 2

  • 2 medium raw Heirloom Tomato
  • 1 Hass Avocados
  • 12 Fresh Basil Leaves
  • 1/2 cup Balsamic Vinegar

DIRECTIONS

1 Slice each tomato crosswise into 6 slices.
2 Cut avocado in half; remove seed and peel; and slice avocado into 6 slices per half.
3 In overlapping style, arrange the tomatoes, avocado, and basil on individual plates or a platter.
4 Add the vinegar (preferably organic) to a small saucepan. Place over medium-high heat. Cook until vinegar is reduced by about half to a syrup-like consistency, about 5 minutes.
5 Drizzle balsamic reduction over the salad, and serve. If desired, sprinkle with salt to taste.
