Vegan Fudgy Chia Brownies

These extra-dark chocolate brownies are far more nutritious than the traditional ooey-gooey treat! They’re based on whole grains and seeds. Recipe + Image: Jackie Newgent, RDN.

INGREDIENTS

SERVES 18

  • 3 tbsp chia seeds
  • 1/2 cup water
  • 1 2/5 tsp pure vanilla extract
  • 1 1/3 cups Coconut Sugar, Unrefined
  • 1/4 cup grapeseed oil
  • 3 tbsp cold water
  • 1/2 tsp sea salt
  • 4 oz Unsweetened Baking Chocolate Bars
  • 1/4 cup Unsweetened Cocoa Powder
  • 1 cup Whole Wheat Pastry Flour

DIRECTIONS

1 Whisk together the chia seeds, 1/2 cup water, and the vanilla until well combined; set aside.
2 Preheat the oven to 375°F. Line the bottom of a 9- x 13-inch (PFOA-free) nonstick baking pan with unbleached parchment paper.
3 Add the sugar and oil to a large saucepan and stir to evenly combine. Add 3 tablespoon water and the salt and stir to evenly combine. Then place over medium-high heat and cook while stirring until mixture comes to a full rolling boil. Continue to boil while carefully stirring for 1 minute. Remove from heat. Stir in the chocolate and cocoa until chocolate is melted. Stir in the chia seed (gel) mixture until evenly incorporated. Stir in the flour until the batter is blended. Pour the batter into the prepared baking pan and spread to create a thin even layer. Bake until springy to the touch, about 18 minutes. Cool completely in the pan on a wire rack.
4 Cut into 24 bars, and serve. Or store at room temperature in an airtight container for up to 3 days or freeze for up to 1 month. If desired, serve with raspberries.
