Classic Margherita pizza ingredients include tomato, fresh basil and creamy mozzarella. For a modern twist, this version uses fresh, vine-ripened tomatoes and vegan mozzarella-style cheese (or lactose-free cheese shreds, if you prefer). Using a quality extra-virgin olive oil and freshly picked basil leaves will take this pizza to the next level.



1. Place a stick-resistant large baking sheet, pizza pan or pizza stone in 500°F oven to preheat.
2. Lightly flour a clean kitchen surface. Shape dough with a rolling pin into an extra-large thin crust, such as a 16-inch oval.
3. Carefully transfer the prepared dough to the preheated baking sheet. (Hint: Gently roll up dough over a rolling pin, then unfold onto the baking sheet.) Quickly brush with 1 tablespoon of the oil; top with the vegan cheese (or lactose-free cheese shreds), garlic, and tomatoes; drizzle with the remaining 2 tablespoons oil; and sprinkle with salt.
4. Bake until the crust is crisp and brown, about 15 minutes.
5. Sprinkle with fresh basil, slice into 8 pieces, and serve.
