Vegan Miso Sweet Potato Poke

This bowl has all the health benefits of miso, a fermented paste, and sweet potatoes.

INGREDIENTS

SERVES 2

  • 3 cups Rice, Jasmine
  • 1 medium cooked sweet potato
  • 2 cups Okinawan Purple Sweet Potato
  • 2 tbsp Jalapenos (Chopped)
  • 1/2 tsp Ume Plum Vinegar
  • 1 tsp Kyoto White Miso
  • 1 tsp Lime Juice
  • 1 tsp Coconut Sugar
  • 1 tsp Oil, avocado

DIRECTIONS

1 In a mixing bowl, combine vinegar. miso paste, lime juice, oil and sugar
2 Add sweet potatoes and jalapeno and toss to coat
3 Place rice in a serving bowl and top with sweet potato poke mix and sunomono
4 Notes:
  Cook rice with 1 tbsp of grated fresh ginger and 1 tbsp of turmeric
  Steam the purple sweet potato; you can sub in white or garnet
  You can use any neutral oil, such as algae
