This vegan poke bowl is packed with nutrients: kelp noodles for iodine and rainbow carrots for anthocyanins.

Ingredients

Directions

1. Soak kelp noodles in hot water for 30 minutes, then drain and snip into manageable length with scissors.
2. In a mixing bowl, toss kelp noodles and sea beans (raw or steamed for 5 minutes) with wasabi paste and algae oil.
3. In a separate bowl, toss carrot cubes (steamed for 5 minutes) with sesame seeds, coconut aminos and chili sesame oil.
4. Scoop noodle and sea bean mix into a serving bowl and top with carrot mix.

Notes:

You can sub regular orange carrots for rainbow carrots
You can sub in soy sauce for coconut aminos
You can use any neutral oil, such as algae oil, for canola oil
