Vegan Paleo Rainbow Carrot Poke

This vegan poke bowl is packed with nutrients: kelp noodles for iodine and rainbow carrots for anthocyanins.

INGREDIENTS

SERVES 2

  • 2 cups Rainbow Carrots
  • 2 cups Sea Beans (salicornia)
  • 2 cups Kelp Noodles
  • 2 tbsp Oil, canola
  • 1 tsp Oil, canola
  • 1 tbsp Sesame Seeds Black
  • 1 tbsp White Sesame Seed
  • 1 tbsp Coconut Aminos
  • 1 tbsp Wasabi Paste
  • 1 tsp Sesame Oil, Hot Chili

DIRECTIONS

1 Soak kelp noodles in hot water for 30 minutes, then drain and snip into manageable length with scissors.
2 In a mixing bowl, toss kelp noodles and sea beans (raw or steamed for 5 minutes) with wasabi paste and algae oil.
3 In a separate bowl, toss carrot cubes (steamed for 5 minutes) with sesame seeds, coconut aminos and chili sesame oil.
4 Scoop noodle and sea bean mix into a serving bowl and top with carrot mix.
5 Notes:
6 You can sub regular orange carrots for rainbow carrots
7 You can sub in soy sauce for coconut aminos
8 You can use any neutral oil, such as algae oil, for canola oil
