Vegan & Paleo Smoky Whole Roasted Okra

Okra has riboflavin, calcium, zinc, vitamin B-6 and a pretty yucky texture, according to most people. When you cut into okra, the cutting creates a “slime” that’s a useful thickener for stews like gumbo. But since that texture may be unappealing, roast them whole, which keeps them slime-free.

INGREDIENTS

SERVES 4

  • 4 cups Okra
  • 1 1/2 tbsp Avocado Oil
  • 1/2 tsp Spices - Smoked Paprika
  • 1/4 tsp Garlic Sea Salt

DIRECTIONS

1 Preheat oven to 400 degrees.
2 Line a cookie sheet with parchment paper and place okra on it. Pour remaining ingredients over okra and shake around to disperse oil and seasonings.
3 Roast for 20 minutes, until okra is fully cooked and has some brown spots.
