These burritos burst with good stuff, including greens and beans. Guacamole and pico de gallo are served on the side so the burrito isn’t overstuffed.

Ingredients

Directions

1. In a large skillet, heat avocado oil (or grapeseed oil) over medium-high heat.
2. Add onions and sauté until lightly browned, about 3 minutes.
3. Add beans, baby kale (or mixture of baby kale and spinach), salt and coriander and cook while tossing with tongs until greens are fully wilted, about 2 minutes.
4. Stir in lime juice and cilantro. Strain mixture of any excess liquids through a fine-mesh strainer.
5. Top each tortilla with greens mixture. Roll up tightly, folding in the sides, and serve with pico de gallo and guacamole on the side.

Notes:
Burritos can be wrapped tightly, chilled and reheated.
