Vegetable and Goat Cheese Panini (From Leftover: Grilled Vegetables)

INGREDIENTS

SERVES 1

  • 1 oz Soft Goat Cheese
  • 1 tbsp Yogurt, Greek, Nonfat, Plain
  • 1/2 tsp White Balsamic Vinegar
  • 1 garlic clove
  • 1/8 tsp Black Pepper, Ground
  • 1 Whole Grain Bun
  • 1 cup Grilled Vegetable Mix

DIRECTIONS

1 In a small bowl, stir together the goat cheese, yogurt, vinegar, garlic, and black pepper until well combined.
2 Spread the goat cheese mixture evenly on both cut surfaces of the bun. On the bottom bun portion, layer the vegetables (use chilled leftover grilled veggies; pat dry of excess liquids) on the bottom bun portion. Place on the bun top for form a sandwich.
3 Grill in a preheated panini grill over medium-high until well toasted, about 6 minutes.
