Vegetarian Breakfast Tacos

Tofu is known to be a cooling food in many traditional cultures, making it a great way to start a hot morning. You can also use eggs in this recipe as well.

INGREDIENTS

SERVES 2

  • 1/2 block Tofu
  • 1 medium raw carrots
  • 1/2 medium Onion, Raw
  • 1 clove garlic
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1 tbsp Tamari
  • 1/2 Avocado, Whole (201g)
  • 1/4 cup Parsley
  • 4 Corn Tortillas
  • 2 tbsp salsa

DIRECTIONS

1 Heat a pan over medium to medium-low heat.
2 Add the oil and then add the onions, carrots, tofu and garlic, sautéing for two minutes.
3 Add the cumin and tamari, stirring them in. Cook for two more minutes.
4 Heat the corn tortillas over a burner flipping continuously until warmed through, if desired.
5 Place tortillas on plates and fill with the tofu mixture, avocado slices, salsa and sprinkle of parsley on top.
