Tofu is known to be a cooling food in many traditional cultures, making it a great way to start a hot morning. You can also use eggs in this recipe as well.

Directions

1. Heat a pan over medium to medium-low heat.
2. Add the oil and then add the onions, carrots, tofu and garlic, sautéing for two minutes.
3. Add the cumin and tamari, stirring them in. Cook for two more minutes.
4. Heat the corn tortillas over a burner flipping continuously until warmed through, if desired.
5. Place tortillas on plates and fill with the tofu mixture, avocado slices, salsa and sprinkle of parsley on top.
