Vegetarian Mexican Personal Pizzas

When you combine the concept of pizza with the luscious ingredients of a bean burrito, everyone wins. Health benefits include plenty of fiber, thanks mostly to the beans, as well as a healthy dose of fresh vegetables including corn, cherry tomatoes and avocado.

INGREDIENTS

SERVES 4

  • 1 cup vegetarian refried beans
  • 4 tbsp salsa verde
  • 1/8 cup Whole Wheat Pastry Flour (100% Stone Ground)
  • 16 oz Dough Pizza Whole Wheat
  • 2 cups Cherry Tomatoes
  • 1 cup frozen corn kernels
  • 1 tbs Avocado Oil
  • 1/8 tsp Sea Salt
  • 8 tbsp Guacamole
  • 4 tbsp Cilantro
  • 4 Lime Wedge

DIRECTIONS

1 Place a stick-resistant large baking sheet in 500°F oven to preheat.
2 Meanwhile, in a medium bowl, stir together the refried beans and salsa. Set aside
3 Lightly flour a clean kitchen surface. Shape dough by hand or with a rolling pin into a four (6½-inch) round crusts.
4 Carefully transfer the prepared dough to the preheated baking sheet. Quickly spread with the refried bean mixture, leaving about 1⁄4-inch rim, and sprinkle with the sliced cherry tomatoes, thawed corn, avocado oil (or olive oil), and salt.
5 Bake until the crust is crisp and brown and corn begins to caramelize, about 15 to 17 minutes.
6 Dollop with guacamole, sprinkle with cilantro, and serve with lime wedges.
