Veggie Stir-Fried Freekeh

Freekeh is an ancient whole grain that’s actually a young wheat. You can use the grain just like you might brown rice; luckily, it cooks faster — especially the “cracked” form of it — and provides three times the protein. You’ll enjoy this nutty, slightly smoky-tasting grain in this Asian-inspired entree.

INGREDIENTS

  • 2 cups Organic Cracked Freekeh
  • 2 tsp Toasted Sesame Oil
  • 1 1/2 tbsp Tamari Soy Sauce
  • 1 tsp Ginger Root
  • 1 tbsp Avocado Oil
  • 1 medium red onion
  • 1 cup Orange Bell Pepper
  • 12 oz Crimini Mushrooms
  • 2 Free Range Large Eggs
  • 1/4 cup Fresh Cilantro Leaves

DIRECTIONS

2 Chill the cooked freekeh or other whole grain. (Note: Do this in advance or use leftovers.)
3 In a medium bowl, whisk together sesame oil, tamari, and ginger. Stir in chilled freekeh; set aside.
4 In a seasoned wok or extra-large stick-resistant skillet, heat avocado oil (or grapeseed oil) over medium-high. Add onion, orange (or red) bell pepper, and mushrooms; stir-fry for 3 minutes. Add freekeh mixture, increase heat to high, and stir-fry until freekeh begins to crisp, about 6 minutes
5 Add eggs and cilantro and stir-fry until the egg is well scrambled, at least 2 minutes, and serve.
