Waffles With Feta and Smoked Salmon

Savory, open-faced waffles are especially satisfying paired with creamy, tangy goat cheese and delicate strips of smoked salmon. Use any kind or combination of flours for this as well as your choice of alternative milks.

INGREDIENTS

SERVES 3

  • 2 cups Flour
  • 4 tsp Baking Soda
  • 1/4 tsp Salt
  • 2 large whole egg
  • 1 1/2 cups Almond Milk
  • 1/3 cup coconut oil
  • 1/4 lb Smoked Salmon
  • 6 tsp Feta Cheese

DIRECTIONS

1 Place the flour, baking powder and salt into a bowl, and mix well.
2 Whisk the eggs together in another bowl.
3 Mix the oil into the milk and then add to the eggs.
4 Pour the egg mixture into the flour mixture and combine well without over stirring.
5 Heat a waffle iron and pour ¼ cups of batter onto each square of your iron. Close the lid and cook approximately 4 minutes or until desired doneness.
6 Place waffles on a plate and spread about two teaspoons of goat cheese onto each waffle.
7 Top with delicate slices of smoked salmon.
