Watermelon Summer Salad

This salad is a hit at any summer party! So light, flavorful, and refreshing! Try adding kalamata olives for an additional burst of flavor. Also, try substituting frozen mango concentrate for the orange juice in the dressing for another alternative.

INGREDIENTS

SERVES 4

  • 2 cups Organic Baby Spring Mix
  • 2 cups Arugula (baby)
  • 4 cups Watermelon-seedless
  • 1 cup Mango, Fresh
  • 4 tbsp Red Onion
  • 1 cup Feta Cheese, Reduced Fat
  • 4 tbsp Extra Virgin Olive Oil
  • 4 tbsp Balsamic (white)
  • 4 tbsp Pure Squeezed Orange Juice
  • 4 tbsp Fresh Mint

DIRECTIONS

1 Put washed lettuces in large bowl.
2 Cut watermelon into 1-inch cubes and add to salad bowl.
3 Dice mango and add to salad bowl.
4 Dice feta and add to salad bowl.
5 In a separate bowl, whisk together olive oil, white balsamic dressing, orange juice, minced red onion, and chopped fresh mint.
6 Pour dressing over salad and toss lightly.
