White Bean Tuna Salad

White Bean Tuna Salad

For an easy lunch or snack, try making this salad (it takes just five minutes to make!). All you’ll need are parsley, arugula, white beans and of course, tuna. Arugula bursts with vitamins A, K and C, while white beans are rich in fiber, protein and antioxidants.

INGREDIENTS

SERVES 2

  • 12 oz canned white tuna (packed in water)
  • 1 tbsp Parsley
  • 1/4 cup Arugula
  • 1/4 cup White Beans
  • 2 tbsp red wine vinegar

DIRECTIONS

1 In a medium-sized bowl, combine tuna, parsley and red wine vinegar. Mix well.
2 Lightly mix in arugula and white beans .
3 Serve Cold.

6 This salad is best enjoyed cold. If necessary, quickly chill the salad in the fridge for 10 minutes before eating.
