In this recipe, an entire head of cauliflower is marinated in a delicious yogurt marinade and then roasted at a high temperature to create a quick and deliciously healthy side dish.

Ingredients

Directions

1. Preheat oven to 400° and lightly grease a small baking sheet with vegetable oil. Set aside.

2. Trim base of the cauliflower to remove any green leaves and stem.

3. In medium bowl, combine yogurt with the lime zest and juice, chile powder, cumin, garlic powder, curry powder, salt and pepper.

4. Dip cauliflower into the bowl and use a brush or your hands to spread marinade evenly over the head of the cauliflower. Excess marinade may be stored in the refrigerator in airtight container for up to three days and used with meat, fish or other veggies.

5. Place marinated cauliflower on the prepared baking sheet and roast until surface is dry and lightly browned, about 30 to 40 minutes. The marinade will form a crust on the top of the cauliflower.

6. Let the cauliflower cool 10 minutes before dividing into wedges and serving.

  • This smelled amazing cooking. The marinate that oozed down into the cauliflower didn't cook and remained liquidy...not good. Even the outside did not crisp up the way I expected. The cooked flavor of the marinate wasn't as good as the smell and it was rather bland actually. I will not make it again and am glad I only made half of the head of cauliflower because I threw it away.
