Zesty White Bean and Arugula Salad

This warm bean salad is seasoned with plenty of citrus and finished with a fresh peppery bite of arugula. Enjoy this as a side salad or make it a meal by making this a recipe that serves two. Image and recipe courtesy of Sherrie Castellano.

INGREDIENTS

SERVES 4

  • 2 cups Small White Beans Cooked No Salt
  • 1 tbsp extra-virgin olive oil
  • 1 whole yiel LEMON Juice, Fresh Squeezed
  • 3 tsp lemon zest
  • 1/4 tsp sea salt
  • 1/4 tsp Pepper, Black
  • 1 1/2 cups arugula

DIRECTIONS

1 Heat the olive oil in a sauté pan over medium heat.
2 Toss in the beans, lemon zest and juice, salt and pepper. Stir and cook for 3 minutes until beans are warm throughout.
3 Remove from the heat and toss in arugula. Toss lightly and serve warm.
