Zucchini & Cauliflower Provencal

This delicious vegetarian dish is remarkably easy and tasty! You can add 1 tablespoon grated Parmesan cheese to top off the meal if you'd like
Ingredients
- 3/4 medium White Onion
- 1 tbsp Extra Virgin Olive Oil
- 1 medium Zucchini (raw)
- 1 Tomatoes
- 1/8 cup Yellow Bell Pepper
- 1/2 cup Red Peppers
- 1/2 cloves Garlic Clove
- 1/4 tsp Salt
- 1/2 tbsp Pepper, Black
- 2 tsp Parsley
- 1/2 cup Cauliflower
Directions
In a small skillet, saute onion in oil until tender. Add the zucchini, tomatoes, cauliflower, green pepper, garlic, salt and pepper. Reduce heat; simmer, uncovered, for 8-10 minutes or until vegetables are tender. Sprinkle with Parmesan cheese and parsley.
