Zucchini Cheese loaf

Zucchini cheese loaf. Not the least calorific, but lots of lovely greens in here!
Ingredients
- 3 cups Plain Flour
- 4 tsp Baking Powder
- 1 tsp Salt
- 1/2 tsp Baking Soda
- 2 cups Vegetable, Zucchini
- 3/4 cup Cheese, Cheddar
- 1/4 cup Onions
- 3 tbsp Parsley
- 3 tbsp Chives
- 2 egg
- 4 tbsp Olive Oil
- 1 cup Low Fat Milk
- 1 tbsp Lemon Juice
Directions
Preheat the oven to 170 c. Line 2 loaf tins with baking paper.
Mix the flour, baking powder, salt, baking soda together. Add pepper or spices to taste.
Grate the zucchini and the cheese. Add to the flour mixture and toss to coat.
Add the herbs and mix evenly.
In a separate bowl whisk together the eggs, milk, lemon juice (or vinegar) and olive oil.
Pour the egg mixture into the flour mixture and mix gently and quickly. It doesn't matter if it is lumpy or even a little floury still - try not to beat it.
Divide between the two loaf tins and bake for 1 hour to 1 hour 15 minutes till crispy and done. Turn out and cool on a rack.
