Zucchini with mushrooms (itialian)

Zucchini, tomatoes, mushrooms,onion, garlic and herbs.
Ingredients
- 1 medium Onion, Sweet
- 1 cloves Garlic Clove
- 3 cups Fresh Zucchini
- 1 cup Mushrooms
- 3 1/2 cups Organic Ready Cut Diced Tomatoes
- 1 tbsp Cholesterol Free Corn Oil
- 2 tbsp Basil (dried)
- 1 tsp Oregano, Dried
- 1/4 cup Grate It Fresh Parmesean Cheese
Directions
Chop Onion coursely and mince the garlic. Put 12 inch skillet on medium heat and add 1 tablespoon of corn oil. Add onion and garlic until onions are soft and carmelized. Wash and cut Zucchini while onions are cooking you can chop or slice. I cut mine in half length wise and then cut into 1/4 inch slices making half moons. If using small ones just slice in 1/4 inch pieces. Clean and cut mushrooms in thin slices. Add zucchini and mushrooms to onions when carmelized and cook until zucchini is soft. Add 2 cans of tomatoes or one large can to skillet. Add basil and oregano. Cover and cook for 20 minutes. Stir occasionally. Taste and add more basil or oregano if needed continue cooking until zucchini are done. Add cheese before serving stir until melted. Serve with extra cheese that can be added by guest as needed. Can put over rice or plain with bread. I have added chicken breast with this for a complete meal.
