Zuchinni & Squash w/Red Bell Peppers
Ingredients
- 1 cup Squash, Zuchinni
- 1 cup Yellow Squash (summer)
- 1 medium Red Bell Pepper, Raw
- 1/2 cup Onions
- 10 1/2 oz Ro-tel
- 2 tsp Ground Cumin
- 2 tsp Garlic Powder
- 4 tbsp Olive Oil
Directions
Heat oil in saute pan on medium heat. Cut up onion and add to pan. Saute onion while cutting up squash and bell pepper. Add remaining veggies to the pan and continue to saute stirring occasionally. Open up a can of Rotel and add to pan. Add spices, you can add more if you like. Cover pan and let steam until veggies are tender.
