How to Slice Scallions

Scallions are members of the onion family, along with chives, shallots, garlic and leeks. Like their cousins, scallions are rich in nutrients, including vitamins A, C and K. Although immature green onions or spring onions are often referred to as scallions, true scallions are straight and have no bulb. Look for scallions with bright green tops. Smaller scallions are sweeter, while larger scallions have a stronger, pungent flavor. Slice scallions and use them in salads or to garnish cooked dishes or hot vegetables. You can also saute the sliced scallions in olive oil or butter and serve them steaming hot.
