How to Make Your Own Instant Noodle Soup on the Fly

Sure, instant noodle soups are convenient, but they’re also excessively sodium-laden and processed. Yuck! But here’s the great news: You can easily make your own cup — or, in this case, jar — of noodle soup. Start by filling a jar with fixings, including noodles, vegetables, protein and herbs. And when you’re ready to eat the noodle soup, simply fill the jar with hot broth, screw on the cap and let stand to “simmer” for five minutes. From curry chicken ramen to vegan pho, there’s a noodle soup variety for everyone. You can also swap in your noodle or vegetable of choice for any of these recipes. One thing’s for sure: You won’t be tempted to purchase store-bought instant noodle soups again!

1. Cajun Red Bean and Vermicelli Soup

Want to eat fewer calories at dinnertime? Choosing this kicked-up noodle soup with beans at lunchtime may be the answer! According to a small study published in Food & Nutrition Research, people who ate beans and peas rather than pork and veal as their main protein source in a meal consumed 12 to 13 percent fewer calories at their next meal. By eating plant-based protein, you’re getting significant fiber, which is one key to boosting satiety. So fill up on this soup, especially if you want to shrink that waistline.

2. Tofu, Asparagus and Brown Rice Noodle Soup

To make this recipe, add cubes of ready-to-eat sesame-ginger tofu into a soup made with soy sauce, asparagus, brown rice noodles, fresh cilantro and vegetable broth. Finish with a splash of lime juice.

It’s got all of the scrumptious components of spaghetti and meatballs without all the excess calories. Feel free to enjoy it straight from the jar, or serve it in a pasta bowl if you prefer.
