Common Ways of Cooking Caribbean Food

The Caribbean crossroads bought together Europeans, Africans and Arawak Indians, all of whom influenced the development of a regional cuisine. The modern cooking method of barbeque in fact comes from a technique developed in the Caribbean by the Arawak Indians. Europeans attempted to discourage slaves from eating meat by prohibiting them from raising cattle. Not surprisingly, chicken and pork appear more frequently than beef in traditional Caribbean recipes, whose cooking methods include frying, grilling and oven roasting.
