These are incredibly delicious, fresh and light-tasting. I really like the peanut sauce, too!

My mom makes these at least once a week. Very simple dish. The key is the sauce, which usually consist of mixture of peanut and hoisin sauce. Nothing is fried. The rice wraps are dipped in warm water to "cook" them, veggies are raw, the rice vermicelli, shrimp, and pork are boiled. Wrap it all up, dip it in the sauce, yummy. It's very filling. I max at 5 rolls.

I love Vietnamese fresh spring rolls! So fresh and tasty, and very healthy with all the vegetables and herbs. The shrimp and lean pork add protein as well. A much better-for-you than the deep-fried version and a perfect summer meal.
