Kale is a great and versatile food. It can be used in stirfries, pastas, and even made into chips. I personally like the following recipe:
1 head kale, 1 tbsp cold pressed olive oil, 1 tsp apple cider vinegar, salt and pepper to taste. destem, cut and clean the kale. in a large bowl, toss the leaves with the olive oil, apple cider vinegar, salt and pepper. bake in the oven at 350 for about 15-20 min until crispy. enjoy hot!

I agree! Kale is fantastic baked into chips -- and incredibly filling at that! I personally prefer to leave mine pretty plain, but I do sprinkle bite size pieces with parmesan before baking, if I have it on hand.
