Quinoa is best cooked in broth or some other flavored liquid rather than plain water as it takes on the cooking liquid's flavor.
It is a complete protein (contains all 8 essential amino acids), so it's very good for you!
I adapted a recipe (http://www.epicurious.com/recipes/food/views/QUINOA-CAKES-WITH-EGGPLANT-TOMATO-RAGU-AND-SMOKED-MOZZARELLA-241481) and made it a bit more healthy. I baked the quinoa cakes in the oven rather than frying, and nixed the cheese from the sauce. It was great!

Love it, but I think that the measurement here should state that it's uncooked or dry.

I agree that it's important to include whether the measurement is for 1 cup dry or 1 cup cooked

I prefer quinoa to rice because it's packed with nutrients and it's so delicious, even if it's just cooked in water! I like to mix it cold (but cooked) into salads.

I ate this topped with grilled salmon. It was very bland, but was much like have rice. I would have it again, but add a vegetable to it while cooking and some spices to give it some zip. It has about the same nutrition value as brown rice.
