Vidalia onions are unusually sweet (you can eat them raw), and you won't cry as much when you cut them. They're a good replacement for regular raw onions (which, if you do the math, is the exact same amount of calories). However, they tend to get REALLY sweet when cooked (think in terms of raw garlic to cooked garlic). Not necessarily good with everything, but still very good. Like regular onions, they are VERY good with potatoes (potato salad, oven-roasted potatoes, etc.)
