If you are craving creaminess and indulgent coconut curry, this easy-to-use sauce from TJoe's is great (much better than the green curry variety they carry). My favorite prep is to bake a small-medium sized winter squash (Kubocha, butternut, even pumpkin), then mash and simmer with sauce for 30 min. The fiber and nutrients in squash make this treat seem a little less rich, and the flavor & texture are truly comforting in the middle of winter.
