I'm Diane Hoch, and this is the health benefits of celery. Celery, which is high in silicon is a natural anti-inflammatory and antioxidant. It's also great for digestive support. The nutrients in celery aid in eliminating toxins to assist our organ's function and regulate body fluid. So, it's a wonderful food, and let me show you a few ways that you can enjoy it. So, here we go, and I have two ways to enjoy raw celery. One is in a smoothie. So, I have this fantastic Vitamix blender which blends up all these different green vegetables, celery being one of them. If you don't have a Vitamix, just cut it up really small and put it in your blender, and it would work as well in there. This actually has some spinach and kale, and avocado, but celery is a main ingredient, which I love. It gives it a nice kick, and you get all the health benefits. And, then, of course, you can also just eat it as a crudite. Raw celery is wonderful, so what I do, is just take a piece of celery, and of course, wash it, cut the bottom and the top, and depending on how small you want it, you know, each length is different, cut it then in thirds, cut it in half, and then you have a beautiful piece of celery to enjoy. You can dip it into something, or just eat it raw. One of the coolest things about celery, it is a low-fat food that actually burns more calories when you eat it than it is to consume. So, low-fat, low-calorie, wonderful food, helps eliminate toxins and is a super food green vegetable. Enjoy your celery! Yum!
