I'm Diane Hoch, and this is a portion size of fresh beets. The portion size of a fresh beet is a half of a whole medium beet or one cup metric measure. The measurement of vegetables is not always an exact science which is why when I create recipes, I like to use a metric measurement. Roasting root vegetables is a great way to get a lot out of a portion size of a fresh beet which can really change depending on the size of our vegetable. So, here you can see with a bowl of beets, there are different sizes. So, how do we really know what the portion size is, great to peel it. So, here we peeled a whole medium size beet which looks nice but look how much more really looks like when you do measure it out in a metric measure and cube it. So, I like cubing them and then what we do is pour them out on a roasting tray, a little olive oil, in the oven, roast them, and we have a beautiful portion of fresh roasted beets that will help prevent sweet cravings.
