I'm Diane Hoch, and this is healthy bean and tomato taco salad. Beans being a great source of protein, fiber and iron make this dish nutritious and satisfying. Rest it on top of a bed of spinach, and you have the perfect dish. So we have kidney beans we're gonna put in a bowl, cannellini beans, diced onions, diced red tomatoes and cilantro. We're gonna toss that together and let it sit while we are going to whisk our dressing together. We have grapeseed oil, water, champagne vinegar, lemon juice, maple syrup and some fresh minced garlic. A little salt and pepper to taste and whisk it up together. We're going to take the beautiful dressing, and pour it on top of our beans, and toss, toss, toss to coat, wallah. Now for that little added crunch, I'm going to take some nice organic corn chips, and crunch them all over the top of my salad for a beautiful finishing touch. I love this healthy bean and tomato taco salad. It is a complete vegetarian meal full of protein, fiber, iron and all the phytonutrients in your dark leafy greens spinach. So add some more plant-based food into your diet. Enjoy.
