I'm Diane Hoch, and this is healthy food for a small group of co-workers. If you're looking for the perfect healthy dish for a small group of co-workers, humus is a great choice. It's filling and simple to make. We start off with chickpeas. Chickpeas are high in protein, fiber and iron. and we're using a Vitamix, but you don't have to, you could use a regular blender as well. Olive oil, heart healthy olive oil, roasted red peppers, we're putting some antioxidants in there. Colors are always good, those anthocyanins and we love some vitamin C with lemon juice. I also enjoy tahini, which is a sesame seed paste. They're again, more fiber, the more fiber we have and protein, we feel satiated and full and level headed and easy, good to work. A little salt, sea salt, a little fresh pepper and we're good to go. You know what, let's add some water because I soaked these chickpeas. Now, you can actually use a canned chickpea, if you're going to use an organic, no salt added, BPA free lining. And here we go, it's as easy as that. So, here we have a roasted red pepper humus, full of the beautiful protein, fiber and iron you need to keep you satiated throughout the day. What a great food to share with some co-workers, especially if you want them to feel good. Whole food, real foods, look at the color of that. All those beautiful antioxidants and fiber, carry that cholesterol out of your body.
