Hi, my name is Charmene Vega, and I'm here to tell you how to eat baked catfish. It's one of those dishes that everybody think's that what ya have to do is you have to fry it. Well, in my case, I wanted to make it a little healthier for you. So, the first dish that I made was a catfish that's made with Mama Vega's Hillbilly Rub. We put the rub on both sides, put it in, baked it, and I'm serving it, actually, with a rice, and the rice is a brown basmati rice with a little bit of barley in it. And, then, on the side, I have a broccoli salad that we made to put with that. In the second dish that I did was using Mama Vega's Hillbilly Barbecue Sauce. And, what we did is we put that in, we marinated it with that, put it in the oven, baked it. Then, we're serving that with some baked potatoes that we did, and, as a side, we did a broccoli salad that you can have. These are two options that would give you something different to serve when you're doing a baked catfish, as opposed to having fried catfish, and anybody would love to have these. Give it a try.
