Hi, my name is Charmene Vega, and I want to tell you about the benefits of ginger candy. Ginger is one of those roots that you have that most people don't know about. You think that what you do is just for Asian food. Well it's not. You could also make a candy from it and it's very good. You can have ginger soda you know to calm your stomach for nausea. Pregnant women it's very good for them to take. If you have a migraine headache you can take it for that. If you have any type of you know can't sleep or any of those things it can also help calm you down. It's also good for circulation for blood. So that means it's good for high blood pressure. There's tons of things that it's good for. I choose to make my ginger candy by using a little bit of honey. But the first thing I'm going to do is I'm going to take the skin that's on it and I'm going to cut the skin off. Or scrape it, you can do either one. Then I'm going to cut it in little chunks or little squares. Then I'm going to take that and I'm going to add it in a pot of honey. A lot of times people will make it with water and sugar. I choose to make mine with honey because that way it's a lower glycemic index for somebody who might be diabetic. Next add ginger to the pot.Then I'm going to add some cinnamon to it. I'm going to add a cinnamon stick to that. The cinnamon is one of those things that also helps to keep the glycemic index down. So now you have the honey in it that's going to have a low glycemic index. And you have the cinnamon stick that's going to help to keep that down. You are going to put this on the stove, you are going to cook it a little bit. Then when you're finished cooking that you are going to take it out. You are going to put it in the oven so that now it kind of caramelizes and crystallizes. When you take it out of the oven you let it cool a little bit. Then what I choose to do is roll it in some coconut but I drizzle a little bit of honey on it to make the coconut stick to it. And then you put it on a dish and you can eat it. It's the most wonderful thing to eat especially with that coconut, vanilla flavor that's going on. It kicks up in your mouth and Mama Vega always says chew on this. It will help you a lot.
