Smoking meat not only gives it a delicious smokey flavor but also slow cooks the meat, keeping most of the juices inside and giving it a tender consistency. Beef brisket comes from the pectoral area of the cow and if overcooked, or cooked too quickly, can become tough and chewy. Smoking a beef brisket will ensure that it is not overcooked and is an ideal method for cooking a barbecue style brisket, even when using a propane grill.

Remove the grates from your propane grill and place the thin aluminum cake pan over the leftmost burner and fill in the remaining space with the aluminum lasagna trays.
Soak the wood chips in a bowl with water or another flavoring liquid for half an hour to an hour before preparing the beef. Beer, wine and whiskey can give your wood chips an extra kick of flavor depending on your own particular tastes.
Prepare the beef brisket using your favorite beef dry rub or other seasonings. Beef marinades can also give your meal a flavor and juice boost but aren't necessary for the cooking process.
Drain the water from the bowl of wood chips and fill the small cake pan with about a handful or two with the chips. Spread the chips around inside the pan to allow air to travel between them during the smoking process. Cover the cake pan in tin foil and poke holes all throughout the top to allow the smoke to escape.
Fill the lasagna trays with water or some other flavoring liquid like beer or apple juice almost to the top of the tray. Turn the left burner under the chip-filled cake pan on "high."
Wait until you see smoke coming from the smoker to add the beef brisket. Cut a piece of aluminum foil slightly larger than the brisket, poke holes through the piece and wrap the brisket in the foil.
Place the foil-covered brisket on the grill and close the lid. Maintain a temperature between 225 F and 300 F inside of the grill at all times to ensure that it cooks properly.
Smoke the brisket for about five to six hours or until the meat is tender. Put a fork into the center of the brisket and twist. If it twists easily, the brisket is done cooking. Check the inner temperature of the beef brisket using the meat thermometer; 145 F is safe to eat for beef.
Remove the brisket once cooked from the grill, let it stand for about 15 minutes and serve.
