Hawaii-Dreaming Green Smoothie


Every time I make myself this delicious, healthy smoothie, my mind is transported back to the Hawaiian island of Kauai. This lush green island’s cuisine is  packed with flavors of coconut and pineapples, just like this smoothie.

This breakfast-in-a-glass contains enough calories, protein and fiber to start your day and keep your blood sugars balanced until lunch time. It’s also the perfect way to get more greens into your diet, your kid’s diet, and/or your partner’s diet in a sneaky way. Kale is great source of Vitamin A, C, K, calcium and magnesium packed with a dose of fiber (5 grams per cup).

Serves: 1
Protein: 7 grams
Calories: 317

1 cup kale, chopped
1 cup unsweetened coconut milk
3/4 cup frozen pineapple
1/2 frozen banana
1 Tbsp chia seeds
1 Tbsp shredded coconut for topping

Optional: Add up to 1/2 cup of additional coconut milk or water, depending on your preference of the thickness of your smoothie.

1. Add all of the ingredients into your blender, and blend until smooth.
2. Add shredded coconut on top for garnish.
3. Enjoy!
