Dinner Tonight - 9/28/21

I took a vacation for two weeks and a vacation from tracking calories. I ate delicious meals and desserts and had a great time. Now I'm back from vacation and back on track. I hope everyone is doing well.

Tonight we had Italian meatloaf with parmesan veggies.

For two:

10 oz lean ground beef (can use turkey)
1 medium zucchini, cut into 1/2" quarter slices
1 medium red-skinned potato, small diced
5 oz kernel corn
2 garlic cloves, minced
1/4 cup panko breadcrumbs
2 oz marinara sauce
2 slices mozzarella cheese
1/2 oz grated parmesan cheese
1/2 oz pepperoni slices, coarsely chopped
1 tsp onion salt

Preheat oven to 425F. Prepare sheet pan with foil and nonstick spray.

In a medium mixing bowl, combine ground beef, chopped pepperoni, breadcrumbs, and half the onion salt. Form two evenly-sized meatloaves and place on the prepared sheet pan. Bake for 15-18 minutes.

Heat 1 Tbsp olive oil in a large skillet over medium-high heat. Add the diced potatoes and a pinch of salt. Cook for 5 minutes, stirring often, until potatoes brown. Reduce heat to medium and add the zucchini. Cook until starting to soften - 3-4 minutes. Add garlic, corn, and remaining onion salt. Cook an additional 3-4 minutes, stirring occasionally. Stir in parmesan cheese and remove from heat.

After the meatloaves have baked for 15-18 minutes, remove from the oven and spread on the marinara sauce and top with a slice of mozzarella. Return to the oven for 2-4 minutes until the cheese is melted.

This tasty meal was ready in about 40 minutes, including prep time. 640 calories and very happy bellies. ❤️
