10-Minute Veggie Fried Rice

INGREDIENTS

SERVES 1

  • 2 tsp Coconut Oil
  • 1 clove Garlic, Whole
  • 1 oz Onions, Green
  • 1 tsp Ginger Root
  • 1 1/2 cups brown rice
  • 1 cup Broccoli
  • 1 carrot(s)
  • 1/3 cup Frozen Peas

DIRECTIONS

1 In a pan heated with oil over medium-high heat, add garlic, green onion, and ginger and cook, stirring frequently, 1-2 minutes.
2 Add remaining ingredients and cook, stirring occasionally, until heated through, about 5 minutes.
3 Enjoy!
