The ingredients here are “clean” and include a free-range egg, mashed banana, flaxseed meal, walnuts, a little coconut sugar, a few splashes of pure vanilla and almond extracts and a pinch of sea salt. Flaxseed meal replaces flour to boost fiber and heart-friendly omega-3s. Serve the warm muffin in or out of the mug. Yum!

1 tsp Grapeseed Oil

1 Free Range Large Eggs

1/3 cup fresh mashed banana

1/4 cup Flaxseed Meal

2 tbsp Walnuts, Chopped

1 1/2 tbsp Coconut Sugar

1/4 tsp Pure Vanilla Extract

1/8 tsp Pure Almond Extract

1/8 tsp Sea Salt
DIRECTIONS

Brush the inside a large (12-ounce or larger capacity) microwave-safe mug with the grapeseed oil (or avocado oil).

Crack the egg into the mug and whisk with fork.

Stir in the mashed (fully-ripened) banana, flaxseed meal, walnuts, coconut sugar (or turbinado sugar), extracts, and salt. (Note: Mug should be no more than 3/4 full of batter.)

Microwave on HIGH for 1 minute 45 seconds to 2 minutes. (Note: Microwave cooking times vary.)

Remove mug from microwave and let stand 5 minutes.

Enjoy straight from the mug or invert and serve without mug.
